A personal word from Bülent on coeliac safety
Why do we do this at all?
Unfortunately, my dear wife has had coeliac disease and a milk protein allergy for over 16 years. Since we see daily how complicated eating out can be, we have been preparing our own gluten-free dishes for 15 years. My wife regularly eats kebabs, pizza, and deli food at our shop – you can therefore rely on our absolute care!
Important information regarding availability and preparation:
- Ask for Bülent by phone: Due to health reasons, I cannot be in the shop from time to time. My staff has a strict prohibition on selling gluten-free dishes when I am not personally present. Even if they mean well – those who are not personally affected easily overlook risks. Please call briefly before your arrival and ask for me (Bülent), or send me an email at nbay@freenet.de. This is how you stay on the safe side.
- Pre-ordering baked goods: Our gluten-free yeast dough (for flatbread, pizza, dürüm, etc.) is prepared fresh by me by hand every day in a separate bowl. The dough must rest and rise. If it is sold out, it is gone for that day. We do not bake more, nor do we put more meat on. What remains, we donate to the food bank (Tafel). It is best to call briefly and pre-order your gluten-free flatbread or your pizza – then I will gladly bake a few extra portions for you!
- Contamination protection:
- The meat, falafel, eggplant-zucchini vegetables, rice, salads, sauces, fries, and all products for the deep fryer are naturally gluten-free.
- All gluten-free ingredients (salads, sauces, etc.) are stored in separate containers.
- We do not use gluten-free wheat starch. Our gluten-free products consist exclusively of rice, corn, amaranth, psyllium husk, and buckwheat flour produced in-house.
- When flouring our standard, gluten-containing dough pieces, we use a gluten-free flour mixture throughout the entire work area. This ensures that the flour dust in the air is guaranteed to be free of gluten.
- Since we also work with normal wheat flour in the same establishment, we cannot exclude minimal traces 100% despite maximum care (however, no direct contamination occurs).
